Summersong Vegetarian Meals

I don't use heavily processed meat substitutes. Instead, many meals include complete protein from tempeh, edamame, sprouted tofu, miso, quinoa, eggs, dairy, or complementary ingredients like rice and beans. The focus is on the veggies!
Nutritionists used to think that complimentary proteins had to be eaten together in the same meal in order to be utilized by the body. However, more recent studies have shown that amino acids can be stored and combined with others eaten in the same day or so. That means if you eat stir-fried veggies over brown rice for lunch and split pea soup with miso and fresh corn for dinner, you've given your body the protein it needs.
